Apricots and Chutney


I like apricots and I like chutney ... mild or spicy... every kind. Here is a simple recipe for Spicy Apricot Chutney.

600g apricots
juice of one lemon
50ml apple cider vinegar
1/2 tsp cloves
1/2 tsp salt
2 pieces cinnamon
1/4 tsp red chilli powder 
120g raisins
60g brown sugar

Rinse, peel and stone the apricots and cut them into little cubes. 

Put all ingredients  into a pan, stir it and let macerate for about one hour.

Then bring to a boil and cook over a low heat for 30 minutes or until soft and brown, stirring frequently.

When it´s good and thick, pour into sterilized jars and seal.

This can be kept  for one year in a cool place.
